Embrace the Monsoon with Taftoon’s Thentuk

With the arrival of the monsoon season, the world around us transforms into a rich, green paradise. The sound of rain, the cool breeze, and the comforting feel of a hot bowl of soup; are all you need to have a perfect day.

At Taftoon, we elevate the monsoon experience with our Thentuk. It isn’t just any soup, it’s a culinary journey into the heart of Tibetan food. It features hand-pulled noodles, cooked in a rich, aromatic stock full of vegetables and spices. Coming from the high altitudes of Tibet (specifically in Amdo), Thentuk is meant to be hearty and nutritious, ideal for the cold mountain climate. It is traditionally served as dinner, and sometimes even lunch. At Taftoon, we’ve taken inspiration from a recipe sourced from Mcleod Ganj, where there is a significant population of Tibetans.

How Thentuk is Prepared

Hand-pulled noodles are the standout feature of Thentuk. Preparing these noodles is an art that needs skill and precision. Our chefs at Taftoon excel in this craft, preparing the noodles from scratch. The dough is kneaded, and then our chefs roll it out and cut the noodles by hand. The result is a bowl of Thentuk where the noodles are perfectly chewy, resulting in a delightful texture to it.

The heart of any great Thentuk lies in its stock. At Taftoon, we take pride in our broth, which we prepare by simmering a mix of fresh vegetables, herbs, and spices for hours. This process allows the flavours to meld into a rich, aromatic base. Key ingredients such as ginger, garlic, and coriander enhance the umami flavour of the stock. The result is something that’s both nourishing and incredibly satisfying, perfect for when it’s a bit chilly or raining outside.

The Taftoon Difference

Monsoon is the perfect season for food that warms you up from the inside. The cool, damp weather makes us crave something warm, spicy, and satisfying. Thentuk is the perfect answer to these cravings. The combination of hand-pulled noodles and a strong, flavorful broth makes it an ideal choice for the rainy season.

At Taftoon, we offer our Thentuk with the choice of an egg drop, and this doesn’t just end up adding protein to your meal; it adds a ton of flavour and texture too! The egg serves to make the soup more hearty and savoury, and you can combine this with condiments like soy sauce to enhance the flavour even more. If you’re looking for a spicy kick, think about adding some chilli sauce to the mix, and enjoy it, especially when you’re feeling a bit stuffy.

And if you’re truly looking to make this a full meal, why not add dumplings to your order as well? At Taftoon, we have Afghani Mandu (steamed minced-lamb dumplings), that perfectly complement the flavours of Thenthuk. Enjoy the flavours of Tibet, Afghanistan and more while the rain is pouring outside when you visit Taftoon.
